INDIA MONSOON MALABAR
Most of the coffee in India is produced in the southern region of the country. In the early days of the coffee production, green coffee was transported in sailing vessels, which took several months to reach European markets. During this time the beans were exposed to very high levels of humidity which changed both their flavor and color. To reproduce these characteristics today a process called "monsooning" is employed. The green beans are spread out in special open-sided barns during the early summer monsoon season, after which they are loosely bagged and rested for several weeks until they have reached the characteristic "monsooned" flavor and color.
